Ingredients
9 Cardamon Pods
thumb of ginger
Cinnamon - 5 cm shard
2-3 tsp loose tea or 2 bags
3/4 pint Full fat milk
1/4 pint water (optional)
1/4 pint of Condensed milk (optional) or Honey or Sweet thing
Method
Start to heat a deep tea pan - med heat
Add cardamon pods and cinnamon until pods are open (gently)
Place in pan Slice ginger
Heat for 20-30 sec
Lower heat
Take cardamons out, remove shells and grind the seeds to a powder.. add back into pan
Increase heat
Add full fat milk, heat on a low to med heat, stirring regularly until milk starts to froth (do not let it overflow) - about 3-5 mins
Add tea and lower temp to gentle simmer.
Simmer for 5-7 mins if adding highly calorific but nice condensed milk, add now and simmer for further 2 mins
if no condensed milk, add sweet thing and simmer for 4 mins.
Sieve into nice chai cups and have with a ginger nut
