Ingredients 

1 kg mutton chops 

1 medium onion finely chopped

2 medium size tomatoes chopped 

1/2 Aubergine peel and diced 

3 tbsp crushed ginger 

2 tbsp crushed garlic 

1 tsp crushed green chillies 

3 tsp of cumin coriander powder (or 2 tsp cumin 1 tsp coriander)

1 tsp turmeric powder 

1/2 teaspoon chilli powder 

three quarter teaspoons of garam masala

Hand full fresh coriander chopped (stalks if possible)

1 tbsp tomato purée 

4 tbsp veg oil 

2 cinnamon sticks

 6 cloves 

1 star anise 

3 cardamons 

2 bay leaves

Salt to season

Method

Wash chops and drain 

heat the pan on medium heat 

put oil in 

add cinnamon sticks, cloves, star anise, cardamon, bay leaves

stir then add chopped onions 

slow cook untill golden brown 

add chopped tomatoes stir 2 mins

add coriander stalks and aubergine

cook for 5 minutes 

add garlic, ginger, chilli, rest of spices

cook the masala on low to medium 

heat until tomatoes and eggplant turn soft and oil separated  

Add salt (1 tsp)

add chops, mix it well and let it cook on low to medium heat 

stir occasionally 

after half and hour add hot water up to cover the chops - cook until chops cooked and falling off the bone 

Add any additional salt to taste

add garam masala and garnish with fresh coriander 

Eat with breads, rice .. whatever you fancy
