From Mum Lad

Ingredients 

four boiled eggs  

small onion  

medium tomato 

1 teaspoon crushed garlic 

1 1/2 crushed ginger 

1/2 teaspoon crushed green chillies 

1 1/2 cumins coriander powder 

1/2 teaspoon garam masala 

1/2 teaspoon turmeric powder 

1/2 teaspoon chilli powder 

1 tablespoon tomato puree 

2 tablespoons oil  

Method

heat the pan and add oil 

add chopped onion cook until golden brown 

add chopped tomato stir and soften 

add the rest of the ingredients apart from the eggs

cook until thick paste then add little water creating a gravy 

then cut the egg in half and put it in sauce 

stir it gently and cook for three to four minutes 

Salt to season

Enjoy with some pitta or bread. Maybe add some salted and cumin soaked red onion 

You could even make the sauce and crack a few eggs into the bubbling sauce, a bit like a shakshuka.. Just cover for a couple of minutes for the whites to set
